I’ve been meaning to share my recent almond meal exploits. This flour substitute is high in protein and yummy, and I vowed to give it a try after sampling a fab quiche that was cooked by a friend.
I initially balked at forking out over $10 for a fairly small bag of the stuff and then opted to press on with
my plan. First I googled an almond base recipe which I followed loosely. This recipe included almond meal, salt. baking soda, grapeseed oil – though I used olive oil – and water.
I combined the ingredients, pressed the dough into the pie pan, cooked it for 15 minutes and then let it cool.
On top I added a regular recipe for a spinach, bacon and parmesan quiche — yum!
Okay I admit the end result was a little mushy but the base itself was perfect and I’ll be giving it another try soon.

Yes I am finding some of the ingredients can be a bit expensive, like brown rice flour, which I got from IGA for $8/500g, ouch. DO you know of any online stores where you can buy cheaper, maybe in bulk? I live regional so its Coles, IGA or a massive hike that I prefer to avoid.
I’d have to throw this question out there to readers. I’d be interested in feedback on this one as I’m planning to post at some point on the best online suppliers.
I own a cafe and get my almond meal and hazelnut meal etc from suppliers,P.F.D.,Superior foods,Sommervilles to name a few.Even spending several hundred dollars a week with them I can’t get it any cheaper than $15 per kilo.I have looked online and when you add the postage and the large volume you must buy you may be better off grinding your own from fresh almonds,wich I did until my needs and time made ths unviable.Hope this hels:)
