Gluten free tortilla time

As one of our Facebook followers commented, gluten free sweet treats are pretty easy to pull together at home. It is the creation of tasty savouries where new inspiration is most welcome.

For this reason, one of the highlights of the gluten free expo for me was the Diego’s stand. They make gluten free corn tortillas which are sold in Coles, IGA, BiLo and Foodland – and are also sold by Woolies under the Select brand.

But what was really great was that they were demonstrating were some brilliant new ways to use them. Though regretfully I did not get to their official cooking demo, I came away from their stall with two great new ideas to add to my arsenal of kid-friendly carbohydrates.

In the absence of specific instructions, I decided to put these to the test at home:

They used a flat sandwich maker to make it. They sprayed the tortilla with oil, spread it with red pesto and added diced ham and cheese and folded it half. They then toasted it (the toasting irons need to touch to get the right effect). After it was cooked they sliced it into portions.

As I don’t have that type of gizmo (yet!) I duplicated this on the stove top. I had toprepped triangles apply pressure and flip it but it turned out well all the same. It also tasted pretty good straight out of the fridge a couple of hours later. (lunchbox potential!!!).

I used some nice roasted capsicum pesto by Arlingtons Fresh Foods that I got pestohold of at the show.

2. Mini tortilla quiches:

This was a little trickier for me as I didn’t actually see Diego’s make one and I haven’t had great luck in the past with mini quiches.

However, I forged on. I pressed the tortillas into a muffin tray, then I just tipped inprep quiches an egg mixture which was made up of one egg, a dash of milk and grated cheese and diced ham.

I cooked my two quiches for about 15 minutes. My burrito shells were a bit crispier than Diego’s and didn’t look anywhere near as nice but they tasted pretty good. They also tasted great a few hours later after a quick 15 seconds in the microwave and the kids even liked them.

quichesBefore I pressed them into the muffin tray, I softened the tortillas in the special microwave bag I bought from them at the show (these are all the go in the USA apparently). It took about 30 seconds per tortilla and they came out great. These bags are also designed to keep the tortillas hot if you are having burritos or some other mexican-style meal.micro pouch

lol. I got these at the expo too and had them as wraps for lunch today. Yum. Great texture, not like the rubbery tough ones I use to get. I got the dvd which shows how to make the quiche cases. Basically cut them in half, make a little cut in the center then twist to form a cone shape & press into a muffin tray. Fill & cook
